#iheartfood

Ohmygosh, I love food! It's always been one of my favorite things about life :) I love eating as much as I love whipping up a new recipe in the kitchen! This summer, I've found a newfound appreciation for all things food. I've fallen in love with Saturday morning Farmer's Markets as much as picking up fresh + local fruits and vegetables at the grocery store. My new favorite way to "waste" time is to look on Pinterest for new recipes! I even have 3 boards devoted solely to food: one for recipes I've tried, one for recipes I hope to try, and one for inspiration. This isn't something I just discovered this summer though. I've always loved food. My mom says she remembers me, age 8, standing beside a table, reading one of the many cookbooks piled atop it, lost in my own little world. I used to cut out recipes from magazines and put them in little memory books. I even took a culinary class for my last two years of high school, which has proven to be very useful recently. For Christmas, I bake huge batches of cookies to give as gifts, because who doesn't love Christmas cookies? :)
Every summer, my family challenges ourselves with a goal of some sort.
This year, mine was to cook more and try out a few new recipes.

#goals


I can't believe that I'm just a few days short of a month until I move back into a dorm! What?! I can't believe I'm about to start my junior (!!!) year of college! Now that I'm officially an "upperclassman", I feel like I have so much more responsibility to myself and my fellow students. I'm so excited to begin this year, and start making some awesome memories.
I've learned so much in the past two years, and yet I still have so much to learn :)

A few of my goals for this year include:
+Maintaining my current GPA
I know I keep saying this, but I'm in a major I love and enjoy learning more about, and my grades have definitely reflected that. Even though my classes are becoming increasingly more difficult, I hope I can keep my current GPA and maybe even boost it :)
+Study material more thoroughly
Here's an area where I definitely have room to improve. I hate reading the required text, but it's definitely necessary in order to understand the material covered in my classes. I hope to set aside more time to study.
+Spend more time IRL than online
I blogged 3x a week during the first semester of my sophomore year, but it took a lot of time and energy that I could have devoted to something else. I enjoyed it, but it wasn't something I was extremely passionate about. I would like to become even more involved on campus, so I'm going to try and spend more time offline this year. I became even more aware of the fact that I spend way too much time online this summer, so I'm hoping to cut back on that amount. 
+Be kinder than necessary
School's tough, and in general the world is, so with that in mind, it's nice to see a smiling face or talk to a friendly person. I hope I can be that someone to others :)
+Eat healthier + exercise more
I've been on somewhat of a healthy kick (more than usual), so I hope I can keep it up when I go back to school. Also, I hope I can make and keep an exercise routine as soon as school begins!

#TBT: Wonderballs

OHMYGOSH. This is a true legit Throwback Thursday + a PSA to all. I'm completely serious. Wonderballs are back!!! Do you remember the hollow balls of chocolate that when broken open contained hard candy?! Because if you don't, you can now experience the wonder of the Wonderball! Or in my case, relive childhood! This candy is probably my favorite candy. I couldn't believe my eyes when I saw one at the register in Walmart last night. I picked it up and bought it without even thinking! I honestly cannot contain my excitement. I've been wondering if they'd ever bring back Wonderballs, and with all the nostalgia/reboots/90s vibes that people have been loving, why would they not?! I'm thrilled that these awesome candies are available again, and hope they expand to include other characters :) 
I remember the Disney ones so well - they were the best!

Poetry That Speaks

When someone says poetry, what or whom do you think of?
Do you think of boring sentences that you've been forced to read in school or writings that people who've already died wrote? Some people might think that that's what poetry is, but poetry isn't all the same. That's what makes it wonderful. I love poetry. I think it's beautiful how individuals can express themselves through writing. My three favorite "current" poets that I can name off the top of my head are: Tyler Knott, Madisen Kuhn, and Rupi Kaur. I love the style of each one, and think they perfectly capture their emotions in the words they write. Here's a few examples..

Texas Recap

I recently took a trip to Texas to visit my family whom we haven't seen since Christmas. It was so good to see and spend time with them!
On this trip, I discovered a love for flying that I didn't even know existed. Every time we took off, I loved the feeling of adrenaline in my veins and every time we landed, I couldn't wait to go back up in the sky. If tickets didn't cost so much, I would use it as my main mode of transportation ;) It's incredible to see Earth from 30,000 feet (cue this song) and really cool to think how small you are compared to the rest of the world. It really makes you appreciate all that this world has to offer.
I wasn't technically "on vacation" until the next to last day we were in Texas, because I was still finishing up my two summer school classes. Even so, it was nice to have a different place to study and be able to take a break and hang out with my family. We didn't do too many 'tourist' activities, seeing that we did most of them the trip before, but we did make sure to include a stop at the Galleria. That mall is huge and offers so many of my favorite stores!
My cousin, who attends Texas A&M, offered to give us a tour of his campus one of the last days we were there. It's the fourth biggest university in the United States, so I was a little overwhelmed when I first stepped on the campus, but I ended up loving it. The university stretches for miles, but the difference between this and other universities is that you can practically feel the community and hospitality found in this place. We ate lunch at Layne's, which I highly recommend. It's a favorite among the students, which I found funny because there's only two items on the menu! As we were walking around, my cousin shared stories and traditions about the university. The one that intrigued me the most was about Pixar. Some people claim that a few of the campus buildings were used as inspiration for the architecture in Monsters University, and Sully from Monsters Inc. was named after one of the college's past presidents! Cool, huh? :) We also visited the Bonfire Memorial. This structure was as beautiful as it was sad. I think it really honored the victims of this horrible tragedy.
The night before we left, my cousin told us about this awesome shaved ice place, Bahama Bucks, and took us there at 10PM. The shop was so cute! I ordered Birthday Cake (my go-to flavor)! It was too cold to sit inside, so we took our orders home with us, and sat on the driveway to eat them. It was so beautiful to sit in silence and look at the stars.
I'm so glad we got to go to Texas this summer. I really enjoyed spending time with my family, and making new memories.

List Update Pt. 2


You guys remember my 101 in 1001 list, right?
It's such a fun concept, and I'm so glad that Mackenzie Horan came up with it!
I love reading lists by other bloggers, and even though I still have more than enough time, I love getting to cross items off my own list.
Here's a few things I've checked off recently :)
+ a few I hope to achieve by the end of the summer!

Form an exercise routine and stick with it for at least a month.
I can't believe that a little over a year ago I wasn't even doing yoga. It's a great way to wake up in the morning and/or to help unwind at night. I also do about 20-30 minutes on the elliptical for cardio, and a plank and crunches daily. This is a general outline of what I do. I'm surprised that I actually like doing these activities!

Keep up a healthy diet.
For the most part, I would say I eat pretty healthy. I usually do not drink sodas, instead opting for water, and I love fruits and vegetables. The only problem is that I have a huge sweet tooth. I'm slowly but surely learning how to curb my sugar cravings :)

Ride my bike more.
In Texas, my cousin let me borrow one of his bikes, so we could follow my sister as she ran.
We biked 5 miles two days in a row, and I loved it!
I'm checking this item off, because my personal bike got stolen when I took it to college :( , but I hope I can buy a new one soon, or rent one when I vacation!

Find 5 new artists to listen to.
I'm almost always listening to Spotify (username: smileshineinspire).

Read 10 new books.
This summer, one of my goals was to read more. I definitely have been reading more than I thought I would, but I have way more on my list than time will allow. I'll do a separate post describing my recent favorites in more detail.

Watch 2 new TV series on Netflix.
Continuum + Friday Night Lights
These two are on complete opposite ends of the spectrum.
One's sci-fi, and the other takes place in a small Texas town.
I stumbled upon the first by mistake, and the second many recommended.

Watch 10 new movies.
I probably watch more than 10 movies in a given year, but I'll do a blog post about this item too!

Bake a pie.
I made an apple pie! I recapped the experience here.

Go berry picking in the summer.
I really want to complete this by the time school starts back!

Try 10 new recipes.
Another goal of mine for the summer was to cook more. I've always loved baking, but cooking always seemed like a bit more work. I've been pinning recipes to a board on Pinterest that consists of mostly 'healthy' foods. I've loved finding new foods to cook with, especially because it is peak season for many fruits and veggies. The Farmer's Market is definitely a highlight of the summer. I plan to check off this item by the end of summer as well!

Floss.
I only started flossing regularly at the beginning of this year, but it's a New Year's resolution that I intend to keep, mostly because I hate when my gums bleed at the dentist. Also, it makes my teeth feel really clean :)

Paint more.
In June, I was inspired to paint about 4 pieces. The above picture is one of them, and one I really liked. This item also ties into the one about me opening an Etsy shop. I think it's a great idea, but I don't have the time or resources.

Collect more postcards.
This is definitely one I'm in the process of completing, just maybe not for the reasons you'd expect. I can't reveal too much just yet :)

Get in the car and just go.
This is a modified version of this item, so I'm checking it off :)
Have you ever heard of that game that some couples play on dates? You take a quarter, pick heads for left and tails for right, or vice versa. Flip the coin to determine which direction you should take, and from there, it decides your adventure. My family and I had fun playing this game, because it led us to  new and unexpected places.

American As Apple Pie

Yesterday, I got to check off another item on my 101 in 1001 list: bake a pie! I used this recipe, and loved it! Next time, I'm definitely going to buy vanilla icecream (froyo for me!) to put on top :)


Ingredients
Crust
1 box Pillsbury refrigerated pie crusts, softened as directed on box
Filling
6 cups thinly sliced, peeled apples (6 medium) - I only used 4 apples!
3/4 cup sugar
2 tablespoons all-purpose flour
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 tablespoon lemon juice*

*I didn't have lemon juice, so I left it out!


Instructions
1. Heat oven to 425°F. Place 1 pie crust in ungreased 9-in. glass pie plate. Press firmly against side and bottom.
2. In large bowl, gently mix filling ingredients; spoon into crust-lined pie plate. Top with second crust. Wrap excess top crust under bottom crust edge, pressing edges together to seal; flute. Cut slits or shapes in several places in top crust.
3. Bake 40-45 mins. or until apples are tender and crust is golden brown. Cover edge of crust with 2-3 in. wide strips of foil after first 15-20 mins. of baking to prevent excessive browning.
Top with icecream!** :)

Snickerdoodle Snacks

Some people crave sugar cookies or chocolate chip, but I crave snickerdoodles.
I found this recipe on The Pioneer Woman, but modified it a bit so I could eat them :)
My family taste-tested them, and they think they're great. Of course, they may be a bit biased ;)
Anyway, I only took one picture, because I didn't think about sharing this recipe until after all the ingredients were mixed and baked. At least it was of the final product!

Ingredients
2 1/2 c all-purpose flour
2 tsps. cream of tartar
1 tsp. baking soda
3/4 tsp. salt
1 c unsalted butter, softened
1 3/4 c granulated sugar
2 lg. eggs
1 tbsp. ground cinnamon


Instructions
1. Preheat the oven to 400ºF and line several baking sheets with parchment paper.
2. In a large bowl, whisk together flour, cream of tartar, baking soda, and salt. Set aside.
3. In the bowl of an electric mixer, cream butter and 1 1/2 cups sugar together until light and fluffy, about 3-5 minutes. Then beat in eggs and scrape the bowl. Turn mixer on low and slowly add flour mixture until well combined. 
4. Mix remaining 1/4 cup sugar and cinnamon together in a small bowl. Use a 1 1/2 tablespoon cookie scoop to measure out dough balls. Roll each ball in your hands to even them out, then roll in cinnamon sugar to thoroughly coat.*
5. Place the balls on prepared baking sheets, 2 1/2 inches apart. Bake for 8-9 minutes, until just barely golden around the edges. Cool for several minutes on the baking sheets before moving. 

*I changed this step. Instead of dividing the sugar, I added all of the cinnamon and sugar to the mixture at once. Then I made the dough balls. I liked the taste of cinnamon throughout the cookies instead of just on the outside.

Friday Favorites (4th Of July Edition!)

July's here, and I'm finally done with summer school! Yay :)
Who's ready to celebrate the Fourth of July?! It's one of my favorite holidays, but then again, when isn't a holiday one of my favorites? Summertime is always so exciting, and getting to celebrate America's birthday is only another reason I love it so.
I'm still on vacation, and loving it! I've loved getting to spend time with my family whom we don't get to see very often. 
I'll be home soon, and hopefully I'll blog a little more now that I don't have to study so much :)
Before we know it, another school year will be upon us and then back to living that college life. 

I could get used to views like this every day :)
